As all the information might suggest, my name is Shannon, and I am the owner of Cake!
For many years I have dreamed of having my own bakery business ; but it wasn't until 2010 that the dream really began. I was a care assistant in a Residential Elderly Care Home ( my second favourite job in the world ! ) when I was diagnosed with Fibromyalgia Syndrome.
For those of you lucky enough to have never heard of it, Fibromyalgia is a condition where your body turns against you - you feel pain everywhere, you're exhausted but can't sleep, you have more symptoms than the Kardashians have clothes... and it isn't pleasant.
I was 21, and I had to give up the job I loved so much, so I turned to another of my loves - Baking. You can forget all your troubles when your kitchen smells of vanilla and you have a bowl full of chocolate frosting in front of you that is just begging to be tested, and of course your family and friends all appear to lend you their support ( by eating all the cakes ).
Four years later and I was still baking, only now I had family and friends asking for dietry specific cakes - my little sister was diagnosed with a gluten intolerance, a friend of mine was vegan and craving rhubarb and custard tarts, and for my part, I had tried every speciality diet going in a bid to lessen my symptoms. More and more I was baking with unusual flours, making my own almond milk and experimenting with converting recipes and I was in my element. And then I found the Princes Trust.
The Princes Trust are the most incredible foundation. From the minute I contacted them to join one of their courses that aimed to help you create your own business, they were so lovely, and supportive, and I would not be running my business now if it were not for them. It took me 8 months, but I came out of that experience a happier, more confident, business woman. My dream had become a reality, and now baking was not just a hobby, it was my living.
Cake! is a small home business, run out of my kitchen, with everything hand made with care. It means the world to me to be able to offer to you a selection of cakes suitable for those suffering from Coeliac Disease, Lactose Intolerance, an egg allergy, if you are vegan, or are cutting wheat from your diet for health reasons... the list is endless and I aim to help everyone. I am even working on a range of diabetic friendly treats.
Please contact me for information on how I could help tweak a recipe for you, although in some cases it might not be possible, ( like nut allergies -it is not possible for me to guarantee a nut free cake unfortunately ) so please contact me before ordering.
I take my inspiration from those around me - many of the flavours I offer are personal favourites of my loved ones and I adore coming up with new recipes based on memories, friends and families suggestions and challenges.
